Coconut Sriracha Sauce

Coconut Sriracha Sauce

 

Have you ever made a new recipe and loved it so much that you couldn’t wait to make it again and again and again?  That’s how I felt when I made this Coconut Sriracha Sauce from Simple Green Meals a few weeks ago. 

It was spicy and creamy and tasted amazing on top of some roasted veggies and rice.  The next day I drizzled some leftover sauce on my scrambled eggs.  At that moment, I knew I wanted to drench ALL of my food in this delicious, easy sauce, but it was gone!  Time to make another batch as soon as possible!

Now, to be clear, I’m sort of cheap and sometimes lazy in the kitchen.  Oftentimes I skip the extras, like sauces, toppings and garnishes.  I actually planned on skipping the Coconut Sriracha Sauce too, but I had all of the ingredients on-hand and it was super quick to make so I gave it a shot.  Best.  Decision.  Ever!

Like I said, this sauce (besides being heavenly) is super easy to make.  You can easily whip up a batch before dinner, even as the table is being set!  We already know it tastes great over rice and roasted veggies, as well as on top of scrambled eggs.  Some other things I think it would taste great on are:

  • Linguine or zoodles
  • A fresh garden salad
  • Baked or broiled fish
  • A dipping sauce for shrimp
  • Baked potatoes

There are only 6 ingredients in the sauce:

  • Coconut milk
  • Sriracha sauce
  • Almond butter
  • Tamari
  • Honey
  • Dijon mustard

The technique is about as easy as it can get – put everything in a bowl and whisk until smooth.  This is actually a perfect recipe for little hands in the kitchen when they want to help.

In the new year, Mike and I are trying to consume more veggies and less sugar and processed starches.  We are also counting calories in the hopes of losing some weight.  Though counting calories is not fun (or trendy) we’ve had a lot of success with this approach in the past.  We know ourselves, and we know that we will succeed if what we eat tastes amazing!  

At around 60 calories per 1 ounce serving, this Coconut Sriracha Sauce will be in heavy rotation in our house during this journey.  That may sound like a lot of calories, but with 5 grams of healthy fat, it’s also a nutritious way to satisfy our taste buds on the regular!

If you don’t have tamari on hand, go ahead and sub it out with soy sauce or coconut aminos – it’ll alter the flavors slightly though.

Coconut Sriracha Sauce

This spicy and creamy sauce is the perfect topping to your roasted veggies, eggs or pasta.  The possibilities are endless!

  • 1/2 cup coconut milk (full fat)
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon almond butter
  • 1 teaspoon honey
  • 1 teaspoon tamari
  • 1/2 teaspoon Dijon mustard
  1. Combine all of the ingredients in a medium bowl.  Whisk until smooth.  Store in an airtight container in the refrigerator for up to 1 week.
